Tom Ieven is a Belgian sommelier now working at Maison Colette, a two-Michelin star restaurant in Westerlo, a small town near Antwerp, after taking the role of Sommelier at Hof van Cleve alongside Peter Goossen. He was also named Belgium Best Sommelier in 2018. With him, we explore the importance of setting goals, discussing the challenges of the moment and the new demands from the consumers.
